3 Ingredient Cheese Cake

Three Ingredient Japanese Cheese Cake with Maltese Ingredients.


80 gms White Chocolate Buttons
80 Gms Rikotta
2 Eggs

This cheesecake  was originally done with Mascarpone. You can use this instead of Rikotta. You can also use Philadelphia Cream Cheese. The texture and method will be the same, but the taste will be different.

The original recipe calls for the following cooking time in an oven, in a baine marie ( water bath )
15 MIns 170 C
15 Mins 160 C
15 Mins left inside the oven while it is switched off.

This all depends on the type of oven you have, and whether it is convection type ( with in-built fan ) or conventional. It also depends whether it is Gas or Electric, so, really, you need to find the right setting based on your previous experiences for the best results.

I wanted to experiment with the local cottage cheese ( rikotta ) and with trying it out in the rice cooker, which I know for a fact that most Asian persons regularly use.  Any questions or comments are extremely welcome. Enjoy !
