           DUCK BREAST WITH BLACK GARLIC 

 

                                

Ingredients :

 2 Duck Breasts

1 Tsp Unsalted Butter

80 Gms Mushrooms

Half Green Pepper ( Julienne)

Half Onion ( Finely Chopped)

2 Tblsp Carrot Shavings

1 Tblsp White Miso

1 Tblsp Black Garlic Paste

100 Gms Black Rice

1 Tsp Anchovy Paste

2 Cups Baby Spinach

100 Gms Baby Asparagus Tips

1 Small Chilli Pepper

1 Tsp Black Garlic Powder


In rice cooker, cook the black rice with twice amount of water until the water is absorbed. Add a knob of butter and 1 tsp anchovy paste. Keep warm .

Saute in skilletpan :

1 Tsp Butter

Onion, Carrot, Green Pepper,

Mushrooms.

Add scored duck breast face down.

Add Black Garlic Paste, Miso, whole chilli pepper, and cook for 6 minutes.

Flip the breasts over and cook for 4 minutes. If you prefer well done cook for a further two minutes.


 Remove Breasts and let them rest before slicing.

 

Add the asparagus tips and baby spinach to the pan. Add 2 Tblsp of water to the vegetables in the pan and stir-fry for 3 minutes.

 Make a bed with the black rice.

Top with the sliced duck breast,

Spoon over the stir-fried vegetables with their juice.

 Garnish with Black Garlic Powder on one side of the plate.
